How to eat as a triathlete...

Tonight, the tremendous appetite I have had for the past three weeks was totally validated by my coach, and I feel so much better ...in fact, I came home from our nutrition clinic and ate half a burrito, a hard boiled egg, 8 slices of cheese, toast with peanut butter, half a beer (whoops, but I am cutting back...only half!), a protein smoothie, and an apple...oh, forgot the dark chocolate bar (only a smidgen).   Apparently around 2700 calories a day is pretty average for a woman training for an endurance event, so this should be fun!  So far, I haven't lost a pound (not that I am trying!), but since I am clearly eating like a horse, that shouldn't be surprising!  Tonight we learned about what we need to keep our bodies healthy during all this training, and what will help us recover quickly and have enough energy when we are training and racing.  I think I need my own personal chef...Pascal? Coach Julie's husband is a wonderful chef...I am betting he's getting numerous offers right about now.....
